About Inkalato

An Inspiration from the Last Ice Merchant

For centuries the Incas in Ecuador would climb up the highest mountain of The Andes with eternal snow to harvest ice.

​

The ice brought down from the mountains were used to make artisanal fruit ice creams called “Helados de Paila.”

​

Today only one ice merchant remains.

​

In a dish called the Paila, the ice creams are made, right in front of customer. The dish is placed against the ice and the fruit pulp and other ingredients are added into the Paila. By taking one handle of the Paila, the merchant rotates the dish against the ice, and after some time the ice cream begins to form. It is ready to eat after being made right in front of your eyes.

Inkalato is based on a tradition that is centuries old. Our first frozen desserts were created this way. We were not able to sell them on the market or in stores because the recipe was only suitable for direct purchase at the time of making it. We alter the original recipe into what you now know as Inkalato frozen dessert.
